BANANA ESSENCE - 1000 FOLD TROBANA®
Derived
from the flesh of ripened fresh bananas of the species Musa
sapientum grown in Ecuador. Variety is Cavendish.
ORGANOLEPTIC
DESCRIPTION:
Clear, colourless liquid with intense odour of fully ripe
bananas.
PROCESSING
:
Produced by condensation of volatile components of freshly
processed banana products. The density is aproximately that
of water and no solvents, processing aids or stabilisers have
been added. Trobana® Banana Essence . 1000 fold is a pure,
water base natural material.
ACTIVE
COMPONENTS:
Characteristic esters, aldehydes, ketones and other components
give strength and character to the banana essence.
SOLUBILITY:
Soluble in water, ethanol, propylene glycol; not soluble in
vegetable oils.
STABILITY:
Twelve months when stored at refrigerator temperatures (less
than 45°F / 7°C) in absence of air and light in sealed
containers. When refrigerated, an organic layer may separate.
Allow essence to reach room temperature and mix thoroughly
to solubilize prior to use. Do not freeze as this precipitates
active ingredients irreversibly.
APPLICATIONS:
This product will produce a natural banana effect, in applications
where a water based aroma system is used to impart a banana
flavour, especially in refrigerated beverages and in refrigerated
and frozen dairy products. Its is also used in combination
with banana puree and other ingredients to enhance the banana
aroma of a product.
RECOMMENDED DOSAGE:
Start at 1% by weight and adjust up or down as desired.
